Accountant by weekday, chef by weekend, and occasional cookbook author, the man simply known as Pepe, of Okayama, Japan has been blowing up our Instagram feeds with his delicious home cooking since 2014.
"When I was a junior high student I loved visiting the Taiwanese/Chinese restaurant in my neighborhood. So much so, that I tried to copy their fried rice recipe and ever since then I've been hooked on cooking."
With our friends at NAVYS Inc. in Tokyo, we caught up with Pepe san to find out how we could get one of his amazing Japanese holiday dishes out here in Boston. So if you're feeling adventurous and want to shake things up a little during this holiday season, you'll want to try his recipe for...
Holiday Tonkatsu (Japanese style pork cutlets)
What you'll need (for 4):
1. 400gs (1 lb) Pork fillet
2. Salt & pepper
3. 2 Eggs
4. 30 ml (2 tbsp) Water
5. 3 tbsp Flour
6. 1/2 cup Panko (Breadcrumbs)
7. 3 cups Vegetable or Canola oil
8. Tonkatsu sauce
1. Mix your eggs, water, and flour together in a bowl.
2. Slice the pork filet to 1.5 cm (.5 in) thick and pound using a meat pounder or pressing flat with the back of a knife.
3. Season both sides of the meat with salt and pepper.
4. Dip the pork in your bowl of egg mixture and dredge in Panko. After removing excess Panko, press the meat gently.
5. In a pan, heat the oil to 180° C (355° F) and add your pork. Deep fry for about 3 minutes.
6. Place your Tonkatsu on cooking paper and allow to sit for about 4 minutes to remove excess oil.
7. Serve with Tonkatsu sauce and enjoy!
