Featured Stories: An Easy, Light Summer Treat, with Some Help from Marie Reginato

If you're like us, a light, healthy dessert is a must during these hot summer nights while listening to music on the patio. And to that end, what's sustenance without a little style mixed in?



So we partnered with our favorite healthy chef and author of the cookbook "Alternative Vegan", Marie Reginato, to give us a can't-miss, easy to make dessert that would vibe with her choice of jazz or indie music playing through her Model One Digital, wi-fi and Bluetooth enabled radio. What you'll need:

  • 1 Peach
  • 1 Plum
  • 1 Apricot
  • 1 Avocado
  • 1/4 cup of mint leaves
  • Dijon mustard
  • Olive oil
  • Maple
  • 1/4 cup of basil
  • Pumpkin seeds

  • Directions:

    1. Using a serrated knife, thinly slice your peach, plum, avocado, and apricot, and arrange them on your dish.

    2. Add a 1/4 cup of mint leaves, a half spoonful of dijon mustard, maple, olive oil, and 1/4 cup of basil to your food processor, or chop by hand.

    3. Mix and lightly pour over your salad.

    4. Sprinkle pumpkin seeds, put on your summer playlist, and enjoy.
